Round seeds of about 3 mm of the genera brassicajuncea (brown), sinapis alba (white) and brassicanigra (black), the latter being the most pungent and less widely used.
These seeds are ground into a fine yellowish-brown powder.
It can also occur in grains, the most common genus being the brown Brassicajuncea. It is used in salads, in meat and fish dishes, as well as in boiled or steamed vegetables.
